Can I sell more than one file on the same product?
Yes. The download page lists each file. A bundle is the option when those files are already separate products.

A download on Quay is a file in private storage. The buyer receives a page by email after payment. The link stops working when the clock runs out, the download count runs out, or you refund the order.
Create a single-download product and upload one or more files. A bundle sells several products you already listed and delivers every file inside. Pay-what-you-want uses a minimum instead of a fixed price. A license product can hand out a key with the file. A membership can open files on a delay.
Each file stops at 20 MB. Quay does not stream audio or video in the browser, and it does not stamp the buyer’s email onto a PDF.
The paid order writes a download grant and emails the page. The store settings hold the default lifetime in hours and the default download cap. A product can be stricter. From the order you can resend the page, reset the counter, or refund the charge. A refund revokes the grant and any license key that went out with it.
A buyer who loses the email can request a library link for that address. The library lists paid orders. It is not a public catalog.
Checkout is a direct charge on your Stripe Connect account. You are the merchant of record. Quay’s Harbor fee, when there is one, is an application fee on that charge. Studio is optional and billed separately as a subscription on Quay’s platform Stripe account.
Quay does not add sales tax or EU VAT. If a download needs a platform to file that tax, do not use this for that job.

They can, until the expiry or the download cap. A refund closes it. Quay does not lock the file against copying during the window you allowed.
